How could I go about dynamically assigning $variable values to the Subject and Message fields of the input form?

Is it doable? Could I go into the plugin's php file and make some changes? If so, where would I need to do so?

Yes you can go into the file gd-recaptcha.php, the variable $short_code_form_code on lines 788-821 display the form when the user has visited your page/post for the first time.

Lines 668-703 are outputted when the user types an invalid reCAPTCHA phrase, and lines 727-762 are outputted when the user submits the form without filling out all the required fields.
